Cucumber Soup (Cold)

Mix:

  • 4c cucumbers, peeled and grated
  • 2c yoghurt
  • 1c water
  • 3T fresh dill, finely chopped (no stems)
  • 1t kosher salt
  • 1t ground pepper
  • 4 cloves garlic, minced with a garlic press
  • 1T honey

Refrigerate two hours.

Garnish with:

  • 1T mint and chives, chopped
and serve.
