Cranberry Corn Bread

Cranberry Corn Bread

Preheat oven to 400, with cast-iron skillet inside

Cook in a pan over high heat until cranberries burst:

  • 2 c Cranberries
  • 1/2 c Sugar
  • zest of a whole Orange
  • 1 T juice of the Orange

Whisk in a warmed mixing bowl:

  • 2 T melted Butter
  • 4 T Olive Oil
  • 1/4 c warm Water
  • 1/2 c Buttermilk

Sift, add to liquid ingredients, and beat:

  • 1 1/4 c Corn Meal
  • 1/2 c All Purpose Flour
  • 2 T Baking Powder

Liberally grease the skillet with butter, Pour in the batter, and bake for 20 minutes until a skewer comes out clean. Serve direct from the skillet.

Julie says - use Baking Powder too...
