Buckwheat Waffle Recipe

Mix:

  • 1 cup self raising flour
  • ½ cup buckwheat flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 2 egg yolks
  • 2 tablespoons sour cream
  • 4 tablespoons melted butter
  • 1½ cups milk

Fold in:

  • 2 egg-whites, beaten to stiff peaks

Cook 2½ mins in the waffle iron

When the waffle is first taken from the waffle iron, it will be relative soft and moist. It will keep warm in an oven at 200F for up to half an hour while you cook the rest. In fact, after 5 minutes in the oven the waffles will become slightly crisp on the outside -- which I find to be the best way to enjoy them.

Serve with slightly warmed real maple syrup, and lots of fresh fruit - especially summer fruit like strawberries, raspberries, peaches, apricots, and kiwis. If you add bananas to the fruit salad, be sparing - the banana flavor is very dominant. Either serve with whipped cream, or for a healthier version, plain yoghurt is good.
